Actually, belief in 6-day creation requires quite more than just literal
interpretation of the Bible.  The story of Genesis is very clearly full
of symbolism and almost as clearly not a complete description of how
people came about. For example, read the story of Cain and Abel in Gen
4:13-17 where Cain is worried about being killed by other people even
though no account is given of anyone other than his family, or read
Chapter 6 which makes mysterious distinctions betweens "sons of god" and
"sons of men" that make no sense if you believe literally everyone was
descended from Adam & Eve.  

Thus, even a strict literal reading of Genesis should make it clear that
it is not history but literature and not meant to be understood exactly
as written.  As always, the Bible continues to be accessible to anyone
who simply tries to read it with a reasonable and open mind, despite
endless efforts throughout history by various boneheads to twist what it
says in various self-serving ways.  This is why many millions of
intelligent and educated people can still believe what it has to say
even though to other people it can seem quite unreasonable.  It really
doesn't require any great mental agility on our part to believe; you
just have to look for yourself and really see what it says, forgetting
all the prejucides you pick up from other people.

Please don't lump the "fundamentalists" you were referring to together
with Christians.  Christ had an extremely strong and unmmistakable view
of hypocrisy, and that is pretty clearly what all these people are doing
when they insist on reading the message THEY want into the Bible, for
reasons that are convenient to THEM personally.
